Nothing warms us up like a great bowl of soup, and this Chicken Veggie soup isn’t only delicious but it’s also extremely good for you.  So if you’re like us and trying to boost nutrition in your home as well as ward off all the seasonal germs, then this is a must try!

 

Best Chicken Veggie Soup

Ingredients

-whole chicken (rinsed and insides removed)

-3 large carrots, chopped

-3 large stalks of celery, chopped

-1 large onion, chopped

-12 small red potatoes, quartered

-1 zucchini, chopped

-1 bag of baby spinach

-1 tbs dried basil

-1 tsp dried oregano

-3 sprigs of fresh thyme

-salt and pepper to taste

Directions

Place whole chicken in large pot and cover with water just to the top of chicken.  Salt the water to your preference, I keep it on the light side and add more later.  Bring water to a boil then reduce heat to a simmer.  As the chicken is cooking, chop and prepare veggies.  When chicken has been cooking for about a half hour, add all veggies, spices, and herbs minus spinach, cover pot.  Cook until chicken floats and meat starts to fall off the bones.  Carefully remove chicken and any bones from pot and place aside.  Add spinach to the pot and reduce heat more.  Pull chicken off the bones and add back to the pot.  Salt and pepper to taste.  Turn off heat, uncover and let fat rise to the top.  Skim the fat and serve!

Serve with crusty bread!
